Established in 2019. We opened our doors in October of 2020. But before that the long road to opening a brewery started with a college curiosity. While studing Anthropology at UF. I kept coming across cultures world wide, past and present that made Mead. Not being familiar with Mead and having none commercially available at the time I ordered some yeast, a fermentation vessel, other equipment, local honey, and started fermenting mead. I enjoyed the process and soon started brewing Beer. Which soon became a passion of mine. I loved that I could try and recreate recipes, make familiar as well as unfamiliar Styles and imagine ways to use not only locally grown but native ingredients most people wouldn't think to put in beer (like Honey, Cactus and Live Oak).
